Phyllo Tart with Summer Vegetables

Fresh grilled summer vegetables in a crunchy phyllo dough crust. Need to finish up the vegetables quick? If you can grill it - use it! This recipe calls for zucchini, peppers and eggplant. Sprinkle with crumbled feta cheese and it's a great brunch, light dinner or appetizer.
